Macerated in rum for two days, the dried fruit should taste better than the jellied mess found in stores. The cakes will be basted (sprayed) with brandy every three days and given to family (and a friend or two) for Christmas.
Always Check Best-By Dates
Always, always, always examine food labels. I bought this turkey, got it home, then realized the best-by date was for January 2020, not 2021. It would’ve been fine but for a $60 turkey, I don’t want last year’s reruns. The store happily accepted the return and I ordered a fresh turkey from another grocery chain.
Bottling the Oxydized California Red
This should’ve been bottled in early December 2019. One thing led to another and it didn’t get done until today. It’s oxydized but may be used for cooking. I’ll start a new batch soon so there’s plenty to give as gifts for Christmas.

For the first time ever, I cured then smoked a pork belly and made my own bacon. Curing took ten days and then hickory-smoked for two hours. It was the most delicious bacon I’ve ever eaten.
